CHAPTER 35: THE WEEKLY KITCHEN SERVICE
THE brethren are to serve one another, and no one is to be excused from the kitchen service unless he is either ill or engaged in business of considerable importance, for by this service an increase of merit and charity is gained. The delicate should have assistance provided for them, so that they may do their duty cheerfully, and indeed all should have help according to the size of the community and the situation of the monastery. If the community is large one, the cellarer is to be excused from kitchen work and also any others who, as we said just now, are engaged in important duties; all the rest are to serve on another in the spirit of charity.
The server who is coming off duty at the end of the week must do the cleaning on Saturday; he must wash the towels with which the brothers dry their hands and feet; but both the retiring and the entering server are to wash the feet of everybody. He must hand back the vessels of his office to the cellarer clean and intact, and the cellarer is to hand them over to the new server, so he will know what he gives out and what he receives back.
